Growing up, it was routine for my mom to pack her and my dad's lunches. Every night after dinner, she would bring out her multi-colored, Tupperware containers, and in what appeared to be an assembly-line motion, would put together his and her lunches. Hers always included a mixed berry yogurt; my dad's wouldn't be complete without a mini fruit pie. It didn't matter what we had for dinner, or whether there were leftovers or not, my parents never failed to pack a lunch. Now, I don't think they primarily did this for health reasons (bean and cheese burritos were not exactly a balanced meal). In hindsight, as a young family, they were just trying to save a bit of money.
It wasn't late into my college years that I realized the value of this small, but valuable, practice. Once I decided it was time to change my eating habits, I began packing my lunches. This not only saved me a lot of money, but a lot of unnecessary calories. Starbucks drinks, Wendy's© combos, and Panda Express© plates were definitely not doing me ANY favors.
In the next few weeks, I'll be sharing some #LightLunch ideas. They will be easy to prep, easy to transport, and cost-effective options, perfect for students, and the workplace!
